Best chicken ever!

I realize this is going to push Kaylee pictures down, but I have to share this delicious recipe (and I promise to post more pictures soon). I found this recipe on about.com and we had it yesterday for dinner. So good! And pretty simple (I wouldn't have made it if it wasn't). I will warn you though... it's a pretty heavy and not so healthy recipe (which is why it's so yummy).

Bacon Chicken


Prep Time: 15 minutes
Cook Time: 25 minutes

Ingredients:

  • 6 slices bacon
  • 1 Tbsp. butter
  • 1 Tbsp. olive oil
  • 6 boneless, skinless chicken breasts
  • 1 onion, chopped
  • 3 cloves garlic, minced
  • 1/2 tsp. salt
  • 1/8 tsp. pepper
  • 1-1/2 cups shredded cheddar cheese

Preparation:

Cook bacon in 12" skillet until crisp, about 4-6 minutes. Crumble bacon and set aside. Pour bacon grease out of skillet, but don't wash or wipe it. Add butter and olive oil to skillet. Saute chicken breasts in this mixture over medium heat, turning once, until chicken is cooked and no longer pink in center. Place chicken in ungreased 12x8" baking dish.

Cook onion and garlic in drippings remaining in skillet. Cook until onion is softened, then stir in salt, pepper, and cooked bacon. Spoon over chicken breasts and sprinkle with cheese. Bake at 350 degrees for 10-15 minutes until cheese is melted. Serves 6

We're almost better!

The 3 of us are still a bit congested, but otherwise we're almost completely better! Yay! It was a tough week. Kaylee was the first to start getting sick with a cold. It wasn't very bad at first, but by Tuesday (12th) her coughing was awful, so I took her to InstaCare. They checked her out and guessed she just had a bad cold and not RSV because her lungs sounded clear (they sent out a sample to be tested anyway). That night Joel woke up with the chills. It was so weird because he's always warm (we call him the "human torch"). He threw up the next morning and slept the next 2 days. By Thursday I started getting Kaylee's cold and Joel had it soon after that (before he was even over the flu, poor guy).

Sunday night I get a call from a nurse at InstaCare checking up on how Kaylee was feeling. I let her know that she was sounding much better. She asked me if I had any questions and I just mentioned that they had taken the sample for testing, but I hadn't heard back so I assumed everything was fine (the doctor had sounded convinced that everything was). The nurse kind of paused and was like "um, no, it's positive. She has RSV." What?! She had called to check up, thinking I already knew. She spent extra time with me on the phone letting me know what to do (no going out for a few weeks, watch her breathing, use a humidifier, etc.). Thank goodness it's only showing itself as a cold for Kaylee, but it's still a scary thing to hear as parents! She is getting better, but don't be offended if we become hermits for the next few weeks till she's fully over it.

Anyway, Joel had work off on Monday for the holiday (good thing, 'cause he still wasn't feeling great) and I had the 1 day flu. He was able to go back to work on Tuesday and I must say, I've really been missing him since. I hated that he was sick, but I really enjoyed spending 6 straight days with him at home. It will be so nice when we're all 100% better. I hope all you other sickos (and soon to be sickos, I'm sure) get better soon!

One Whole Year!

That's how long Joel and I have been married! Crazy! We celebrated our 1 year anniversary on Saturday, February 9. It was so much fun! Joel is amazing and did a great job planning it and surprising me. Here's the story (it's long, so I'll add pictures to make it more entertaining)...

First of all, Joel let me know I needed to have 2 bottles ready for Kaylee "just in case." He said we could be having someone babysit her or she could be coming with us and he was having me get the bottles ready to throw me off. He also told me to wear a nice dress, bring a change of clothes, and be ready Saturday at noon.
Saturday morning I woke up to find Joel gone. I texted him to find out where he was. He texted me back and had me check everywhere in the apartment he could possibly be hiding and then I heard a knock on the door. There was sweet Joel with a dozen beautiful roses! And not just any roses... my favorite kind (the peachish/orange kind with red tips)! Then he made me eggs, orange juice, and gluten-free pancakes (my favorite).
We were ready to leave shortly after noon and we headed south. He kept having me try to guess what the plans were and he, of course, kept throwing me off track. My main guess was that we were dropping Kaylee off with my family and going to the temple, but when we were at the light to turn to get to my families he kept driving straight. That confused me. Where were we going in church clothes that we could take Kaylee? Well, he was just trying to trick me and he turned around and we took Kaylee to my families after all. But then he didn't turn the right way to get to the temple. We were heading towards Orem/Provo, so my new guesses were restaurants, but I couldn't figure out which. Joel continued to make sure I was confused by taking detours along the way. We drove past our first apartment in Orem and continued to head south. I kept guessing where we were going and kept guessing wrong. Lucky him, I completely forgot where my favorite restaurant was located until it was in site. He took me to Carrabba's! YUM!!!!!!!

SIRLOIN MARSALA
10 oz. USDA Choice center-cut sirloin
grilled and topped with mushrooms,
prosciutto and our Lombardo
Marsala wine sauce

I also got the most delicious strawberry cream smoothie that tasted like Creme Savers, only better and Joel got frozen strawberry lemonade. I've now decided that my favorite food is chicken and sirloin marsala and my favorite drink is the smoothie I had there. I was seriously in heaven!Yes, I did post the food descriptions to make you all jealous ;).

After we ate we went across the street to Sierra West to have my ring inspected (don't want any diamonds falling out!) and cleaned. I love how it sparkles!

Next we went to the Timpanogas temple to do sealings (I did guess right! Just not in the right order). It was my first time doing sealings and really neat to be at the temple on our anniversary.
After that we went to pick up Kaylee from my families and we hung out a bit. At this point I was under the impression that we were heading back to our place to hang out. I was wrong. Joel had another surprise for me... he took me to see Enchanted!!!
Yes, this is now one of my favorite movies. I loved it! So did Kaylee. She was so good during the movie and even watched half of it (we took her to a movie before and it was a disaster). Afterwards we went home and hung out. It was such a great day!

I love Joel so much! He is the perfect man for me and an amazing father to Kaylee! The past year was wonderful and I look forward to the rest of eternity.

I cleaned the entire bathroom (floors and everything) and started a craft project!

Joel ate his vegetables at lunch and took out the garbage (the dumpster is on the other side of the building)!

Kaylee did really well with tummy time/baby pushups and took a nap in her crib (she prefers the couch or love sac during the day)!

I'm so proud of us! :)

Blah

That's how Spencer, Mike (Joel's brothers), Joel and I decided we felt after watching the movie "Cloverfield" in theaters Saturday. The "blah" isn't how we felt about the actual contents of the movie (I'll let Joel give his and his brothers reviews of the movie). "Blah" is how we felt physically. This movie is filmed from the point of view of someone with a handheld home video camera (think Blair Witch meets Godzilla) and the shakiness of the film made us sick!

We made sure to sit on the back row as was recommended to us, but we still left feeling dizzy and weird. I'm not saying don't see this film (I thought it was worth seeing though it's definitely not in my top movie picks), I'm just saying be prepared. Some suggest taking Dramamine before seeing it if you get motion sick easily. I suggest not seeing it if you're pregnant or have something important to do in the hours following the movie. Also if you're squeamish be prepared to be a bit grossed out. There seriously should have been a video camera on me while I watched it because I know I made some pretty funny faces throughout the whole thing.

Something has happened to our ward!

It was totally different yesterday! Okay, not totally different. Seating still went to the back (though there were a lot of people missing... hmmm, superbowl?) and it was still noisy with kids being allowed to wander. But it was testimony meeting and only 2 kids bore their testimonies! And one of the kids had her mom standing next to her (though she still was entertaining). We're wondering if something was said in sunday school or something about allowing your kids to get up. It was really nice to have a bunch of adults sharing their testimonies this month. We'll keep you updated on whether or not this continues.
